In a large mixing bowl, combine the crumbled tofu, breadcrumbs, green onions, grated ginger, minced garlic, soy sauce, cornstarch, and egg. Mix everything together until well combined.
Using your hands, form the tofu mixture into small patties (about 2-3 inches in diameter). You should get around 8-12 fritters.
Heat the olive oil in a large skillet over medium heat.
Add the fritters to the pan, cooking for 3-4 minutes on each side until golden brown and crispy.
While the fritters are cooking, whisk together the soy sauce, honey, rice vinegar, sesame oil, and grated ginger in a small saucepan.
Heat over low heat, stirring occasionally, until the glaze thickens slightly (about 2-3 minutes).
Once the fritters are crispy and golden, remove them from the pan and place them on a paper towel to drain excess oil.
Drizzle the sticky ginger glaze over the fritters or toss them gently in the glaze.
