Problems i had with the recipe:
Getting the tofu into equivalent sizes of crumble is hard. Maybe a chopper?
Breadcrumbs and cornstarch are shown to be mixed in, vs on the outside in layers
1 egg is not enough to hold it together with the breadcrumbs, might be a little easier with those ingredients outside

Sticky Giner Tofu Fritter

For Tofu Fritter
- 1 block firm tofu (pressed and crumbled)
- 1/2 cup breadcrumbs (or gluten-free breadcrumbs)
- 1/4 cup green onions (chopped)
- 1 tbsp fresh ginger (grated)
- 2 cloves garlic (minced)
- 1 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp cornstarch (for crispiness)
- 1 egg (or flax egg for vegan option)
- 2 tbsp olive oil (for frying)
For the Sticky Ginger Glaze:
- 2 tbsp soy sauce
- 2 tbsp honey or maple syrup
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1/2 tsp grated ginger
In a large mixing bowl, combine the crumbled tofu, breadcrumbs, green onions, grated ginger, minced garlic, soy sauce, cornstarch, and egg. Mix everything together until well combined.
- Using your hands, form the tofu mixture into small patties (about 2-3 inches in diameter). You should get around 8-12 fritters.
- Heat the olive oil in a large skillet over medium heat.
- Add the fritters to the pan, cooking for 3-4 minutes on each side until golden brown and crispy.
- While the fritters are cooking, whisk together the soy sauce, honey, rice vinegar, sesame oil, and grated ginger in a small saucepan.
- Heat over low heat, stirring occasionally, until the glaze thickens slightly (about 2-3 minutes).
- Once the fritters are crispy and golden, remove them from the pan and place them on a paper towel to drain excess oil.
- Drizzle the sticky ginger glaze over the fritters or toss them gently in the glaze.
Verdict:
Meh. Would not do again
More unhealthy that it needed to be.
