Marinated Mushrooms

I found this recipe on fb and sadly copying the recipe doesn’t keep the wonderful poster that created it.

I feel that these taste just like the wonderful ones in the giant bottle from my youth!

Nice and easy and a great result

Monster Bites – Marinated Mushrooms

  • small pot
  • jar
  • 1 lb whole button mushrooms
  • 1 cup white vinegar
  • 1/2 cup water
  • 2 tbsp sugar
  • 1 tsp salt
  • 3 cloves garlic (smashed)
  • 1 tsp mustard seeds
  • 1/2 tsp red pepper flakes
  • 1/2 tsp black peppercorns
  • 1 tsp dried oregano or thyme
  • 1 tbsp olive oil
  1. Clean mushrooms and lightly score the tops with a small knife.
  2. Bring a pot of salted water to a boil and blanch mushrooms for 5 minutes.
  3. Drain and let cool slightly.
  4. Pack mushrooms into a clean jar with garlic, mustard seeds, red pepper flakes, peppercorns, and herbs.
  5. In a saucepan, heat vinegar, water, sugar, and salt until fully dissolved.
  6. Pour hot brine over mushrooms until fully submerged.
  7. Drizzle olive oil on top, let cool, then seal and refrigerate.

Verdict:

Such a fun recipe and such a delightfull flavor

I think the mushrooms could be cut in 1/2 or even quarters.
