We still enjoy quinoa, always a treat, generally pick riced cauliflower these days, but still a great options. I like to cook the quinoa with some coconut oil to help with digestion.
The original recipe called to cook in a pan or on a griddle. Seems that either the pan doesn’t hold enough or the middle burner doesn’t keep the “built in griddle” evenly heated… I have also read about silpat vs parchment paper.
I changed up this recipe to cook it in the oven, and using parchment paper.
I started with 350,then 375 and the final flip at 400. I’m crazy and wild!
Quinoa Cakes

Mix up your veggies, cheese option or spices! This last round I had some Jamaican spice to mix it up
Ingredients
- 2 cups cooked quinoa
- 2 eggs or 2 egg whites
- 1 cup shredded carrots
- 1/2 cup parmesan cheese
- 1/2-2 tsp seasoning
- 1/4 tsp salt
Instructions
- Preheat oven to 375
- Mix everything together
- Prep cookie sheet with a peice of parchment.
- Using a 1/4 cup measure, place mixture evenly on the pan
- Cook for 10 min
- Spin cookie sheet, cook for 10 min
- Raise temp to 400
- Flip cakes
- Cook for 10 min or until desired amount of doneness
Verdict:
There are great option as a side or replacement for rice. You can change up the veggies and spices to make it what you want!
