Parmesan Crusted Pork

This is a wonderful weeknight meal, that virtually makes itself.

The only pre-prep needed is to cut your pork into manageable sizes (as in wal-mart has super thick ones) or just put one in the fridge . For 2 people we split one in half based on servings sizes.

Ingredients
  1. 1/4 cup dijon mustard
  2. 2 tbsps olive oil
  3. 1/4 tsp leaves dried basil
  4. 1/4 tsp garlic powder
  5. 1/4 tsp leaves dried oregano
  6. 1/4 tsp leaves thyme
  7. 1 dash black pepper
  8. 3/4 cup parmesan cheese, grated
  9. 1 pork chops (top loin, lean, boneless)

Instructions
  1. Preheat oven to 400 °F (200 °C).
  2. Line baking sheet with parchment or wax paper and set aside.
  3. In a small bowl whisk together mustard, oil, and spices.
  4. Season the pork chops with pepper, then brush both sides of the chops with the mustard mixture.
  5. Press the grated parmesan cheese into both sides of the chops.
  6. Place the chops on the prepared baking sheet. Bake for about 15 to 20 minutes. The coating should be browned and slightly crispy and the pork should be cooked all the way through.
Notes
  1. Don't go fancy with the mustard, basic dijon is perfect!

Combine the spices

Day of:

  • Heat the oven to 400 degrees.
  • In a small bowl whisk together mustard, oil, and spices.
  • Season the 4 pork chops with pepper, then brush both sides of the chops with the mustard mixture.
  • Press the grated parmesan cheese into both sides of the chops.
  • Place the chops on the prepared baking sheet. Bake for about 15 to 20 minutes. The coating should be browned and slightly crispy and the pork should be cooked all the way through.
