- 1 chicken breast per 2 people
- 1-2 cucumbers
Pantry:
- Hoisin Sauce
- Honey
- Rice Vinegar
- Corstarch
- Salt
- Garlic Powder
- Ground Ginger
- Black Pepper
- Five Spice
- Sugar
- Soy Sauce
- Sesame Oil
- Rice
Prep Day:
- Pound the chicken thin, cover and store (Hoisin Chicken)
- Spray small container with cooking spray – i use trader joe’s coconut oil spray. (Hoisin Chicken)
- 1/4 cup hoisin sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 teaspoon dark sesame oil
- Combine cucumber marinade ingredients in a medium bowl that has a cover
- 1 tsp salt
- 1 tbsp sugar
- 1 tbsp soy sauce
- ¼ cup rice wine vinegar
- 1 tsp sesame oil
- Make spice mixture for chicken (Hoisin Chicken)
- 1/4 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ground ginger
- 1/4 teaspoon black pepper
- 1/8 teaspoon five-spice powder

Peel and slice cucumbers
- Store with a paper towel to absorb any liquid
Night Before
- Combine marinade and cucumbers
Day of:
- Make rice
- Add mixture of
- 2 teaspoons cornstarch

2 teaspoons water
to the Hoisin Chicken Sauce
- Heat sauce for the chicken
- Turn on the broiler
- Sprinkle spice mixture on chicken
- Prep pan – foil, cookie sheet, cooking spray
- Cook chicken per recipe
- Eat!
Options:
- Add an extra breast if you want left overs or cooking for more than 2
- Add a quick cooking soup – corn and bacon for example for a 3 course meal.
