I have been trying to up my fiber content and trying new and different recipes.
This seemed like an interesting option.


The outcome was less than expected, not really pudding more like liquidy.
It was an interesting snack option, topped with berries.
Vegan Chia coconut pudding

Ingredients
- 1/2 cup black chia seeds
- 3 tbl sugar free maple syrup
- 2 tsp vanilla extract
- 1/8 tsp kosher salt
- 1 14 oz can light coconut milk, shaken
- 1 cup almond or other nondairy milk
Instructions
- In a large bowl, combine chia seeds, syrup, vanilla and 1/8 tsp salt, making sure there are no clumps
- Whisk in coconut and almond milk
- Transfer to jar, cover and refrigerate at least 2 hours
- Serve, topped with berries and pipits
Verdict:
This is an interesting option and way to get some chia!
Adding the frozen, defrosted fruit to the top makes it fun
