When your neighbor brings you a gallon size bag of hotter than hell jalapenos… you look for some other recipes to try…
I had a version of this recipe, and found a couple others.
The result was soooo hot. I served it over cream cheese at a gathering and folks loved it! One friend took in a couple seeds and nearly asphyxiated from the heat!
A couple of the extra jars folks took home to enjoy even more!
The first round of this recipe i simmered the liquid too long and made hard candy… the second round i didn’t simmer it enough. After it all cooled, i drained the jalapenos and resimmered the liquid to just the perfect consistency.


Cowboy Candy
Ingredients
- 1 lb jalapeno peppers, sliced
- 1 cup apple cider vinegar
- 2 cups granulated white sugar
- 1 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon mustard seeds
- 1/4 teaspoon celery seed
- 1/4 teaspoon ground turmeric
Instructions
- Wash the jalapenos, remove the stems, and slice into 1/4″ rounds – remove seeds if they are hella hot
- Combine the apple cider vinegar, sugar, salt, and spices in a medium saucepan and bring to a boil over medium-high heat, stirring occasionally until the sugar dissolves.
- This should take about 3-5 minutes.
- Add pepper slices to the mixture and return to a boil.
- Cover and reduce heat to medium-low.
- Simmer until the peppers change color and soften.
- This should take about 5-6 minutes.
- Using a slotted spoon, transfer the jalapenos to a pint-size mason jar or heat-proof container.
- Bring the liquid back to a boil and boil until reduced by half. This should take about 5-8 minutes. The liquid should be syrupy.
- Pour or ladle the syrup over the jalapenos, pressing down the peppers as needed to submerge them in the syrup.
- Allow the mixture to cool. Once cooled, wipe the rims of the jars clean with a damp paper towel and put the lid on the jar.
- Refrigerate until ready to use.
Verdict:
This could be amazing with normal heat jalapenos! I did a first round with some super teeny tiny ones thinking it would be cute and fun.
It was a great syrup and is a fun appetizer on creamcheese! might even be delightful on goat cheese.
