Big Dip Energy – Espressomartinimisu Dip – Cook the cookbook

This dessert option was kind of a must do. The ingredients ended up being somewhat hard to source, or i made my own problems… tomato tomato.

Hubby got me “Big Dip Energy” cookbook by Alyse Whitney for Christmas. As you probably know, i love to cook and i love to experiment. A neighbor recently after receiving an “experiment” apple cake, asked – do you ever cook anything twice? I laughed and laughed!

Espresso beans – ordered thru amazon (i’ve done this before for christmas presents, so yes i got an exorbitant amount, yeah me and caffeine high!)

Lady Fingers – the recipe calls for “the cake kind”. I honsetly have no idea what that means. My grocery stored didn’t have them, the italian bakery that i drove all over, around constructions, and closed roads – they only had the “crisp” kind. Theirs were $10 for i don’t know how many, but i knew that walmart had a package of cookie kind for 1.99, so thanks, i’ll be on my way… Not sure if it made a difference, but noone seemed to mind.

Heavy cream – we occasionally have a drought of different manner of cream (no idea why), so i went with plant based and i liked it.

When i was grabbing my lady fingers between meetings, my normal shopping app froze so i couldn’t find the other ingredients i needed, which lead to a second trip to get the mascarpone cheese.

Espresso powder – i almost never use espresso powder, i use no name brand instant coffee! it’s all good in my book!

I forgot to read the suggested dippers and my brain went right to animal crackers! (one of the suggestions is chocolate covered pretzels – sound a bit decadent and fun)

Verdict:

It was fun, and now i have a giant bag of chocolate espresso beans in the house, but probably more work than necessary for a dessert dip! I think folks were scared of the espresso in the name and being up at night.
