Bacon Cheddar Crustless Quiche

I wanted to make a fun breakfast for christmas. This was full of protein and I thought would be a fun recipe to try. It had cheese and bacon so I knew the hubby would enjoy it!

It was very easy to make and quick to cook.

Bacon Crustless Cheddar Quiche

Ingredients
  

  • 6 large eggs 2 egg whites, 4 eggs
  • ¾ cup cottage cheese
  • ½ teaspoon kosher salt
  • ¼ teaspoon pepper
  • ¾ cup shredded cheddar cheese divided
  • ½ cup crumbled cooked bacon or up to 1/2 pound

Equipment

  • 1 pie pan

Method
 

  1. Preheat oven to 375° degrees. Coat a glass/ceramic pie plate with nonstick cooking spray, set aside.
  2. In a blender, add eggs, cottage cheese, salt and pepper.
  3. Blend until there are no chunks left.
  4. Pour egg mixture into a bowl and mix in ½ cup shredded cheddar cheese, crumbled cooked bacon.
  5. Pour into prepared pie dish.
  6. Sprinkle with remaining ¼ cup cheddar cheese and top with 3 slices of reserved bacon
  7. Bake for 25-28 minutes, or until eggs are cooked through and set in the middle.
  8. (Note that the dish will be puffy when baking but will settle when taken out of the oven.)
  9. Remove from oven and let cool for 5 minutes before cutting into slices.

Verdict:

Fantastic! So easy, and it refreshes in the air fryer great.
