I’ve gotten to really enjoy radishes lately. I don’t remember what the occasion was, maybe it was the posole festival.
I have been enjoying them in salads, tacos, hummus wraps really anything these days.
One day i was roasting some tomatoes that were on the verge of not being viable and i thought… hmmm, wonder what would these taste like. I looked up some recipes and went with this one to start.
This was fun, they came out great, and i really like them this way as well! Hubby – not so much, he found them “too squishy”. The flavor was great in my opinion!

Roasted Radishes
Ingredients
- 1/2 lb. fresh globe radishes, stems removed, ends trimmed, and halved/quartered
- 1/2 tablespoon melted ghee or butter*
- 1/4 teaspoon fine salt
- dash teaspoon black pepper
- 2 garlic cloves, finely minced**
Instructions
- Preheat oven to 425℉.
- Combine the radishes, cooking fat (ghee, butter, or oil), dried herbs (if using), salt, and pepper in a bowl.
- Toss until the radishes are evenly coated (Note: Don’t add the minced garlic until step 5).
- Add any additional spices
- Spread the radishes into a single layer in a baking dish.
- Bake for 20-25 minutes, tossing every 10 minutes.
- After the first 10 minutes of baking, add the minced garlic and toss well.
- Return the dish to the oven to bake for an additional 10-15 minutes or until the radishes are golden brown and easily pierced with a fork.

As I said above, such a great recipe and a fun way to your veggies!
