Found this recipe in a Real Appeal recipe book. Took me a while to find the bran but now i do and it made some lovely pancakes!
Buttermilk Pancakes
Notes
I used butter flavored olive oil – it was lovely.
We top our pancakes with peanut butter and syrup.
Obviously adds calories, but yum yum!
Ingredients
- ¾ cup whole wheat flour
- ⅓ cup all-purpose flour
- ⅓ cup wheat bran
- ½ teaspoon baking soda
- 2 eggs, beaten
- 1 ¼ cups buttermilk
- ¼ teaspoon salt
- 2 tablespoons olive oil (butter infused flavor)
Instructions
- In a large bowl, mix flours, bran, baking soda, eggs, buttermilk, salt and olive oil until just combined.
- Heat a heavy bottom skillet over medium heat. (electric skillet)
- Melt butter on the skillet
- Drop a scant 1/4 cup of batter at a time onto skillet, making 12-16 pancakes total (you will have to do this in batches).
- When bubbles appear on the surface of pancake, approximately 2 minutes, flip, and cook the other side for 2 minutes.

Hubby was happy because he got big pancakes vs the silver dollar ones i usualy make for him!
Pro tip: Keep the powdered buttermilk on hand, so easy to use it when you need it!
