This was mentioned in the last recipe – deviled spam musubi dip. We followed the suggestion in the book and decided these would be great to dip into the spam dip!
Hubby got me “Big Dip Energy” cookbook by Alyse Whitney for Christmas. As you probably know, i love to cook and i love to experiment. A neighbor recently after receiving an “experiment” apple cake, asked – do you ever cook anything twice? I laughed and laughed!
The final step before frying is to press it into a 9×13, hold down a second pan on top with heavy cans, and pop it in the fridge… 4 hours to overnight. Was a little tricky with finding room in the fridge when you are having a party, but i did it!
I didn’t have a sheet pan this size, or maybe i actually did, but didn’t realize it, so i used my pyrex and it worked great! Worked better to have a second set of hands to get the rice into the pan with the parchment paper.
I found it also went better to press down with your topper pan ( i had to use my smaller pyrex and just shift it around)
I like the taste of the rice even without cooking it!
The rice is basically how i make my musubi rice, just then you fry it! Generally we don’t fry in the house – early on in our relationship i tossed his deep frier and stated if we canted fried food we go out and pay for it! I make an exception every few years or so, have to clean for ever and then remeber why we don’t fry in the house!
Hubby was tasked with the frying. He did a great job! We use the dutch over as it will hold the heat and can hold a nice amount of oil.
We were close to party time, so i forgot to take many pictures… Try it, it’s great, just a little time consuming and possibly needed to be done close to party time. Having now tried them the next day – i disagree, make it the day prior, allow them to cool and drain on paper towels, then store them a few in a papertowel in a baggie and they are good to go the next day!

Verdict:
These were great, held up to use as a dipping item. Also great to spread whatever dip on top.
It was a bit more effort than i would want to put into a “dipper”, but once in a while or just for fun, it was worth it. Also I prefer spam musubi period, although the idea of these dippers with spam sliced on top… did cross my mind.
