Quinoa Cakes

As we have modified our diets over the years we removed all the “white foods”.
Rice, potatoes, pasta, bread…
But there was a grain that was sorta white, and had more protein and there were so many things that you could use it for. So, we added that into our rotation, in moderation.
I got this recipe from my MIL and it’s a great substitute for rice – something to “sop” up the sauce!
It’s pretty versatile, you can add different veggies as binders, or cook the veggies with the quinoa. Many options!

Little pancakes, great for soping up the sauce and

Ingredients
- 2 cups cooked quinoa
- 2 eggs or 2 egg whites
- 1 cup shredded carrots
- 1/2 cup parmesan cheese
- 2 tbl flour
- 1/2 tsp season salt
- 1/4 tsp salt
Add ingredients to shopping list

Instructions
- 1. Heat a skillet to medium high heat
- 2. Mix everything together
- 3. Using a 1/4 cup measure, place mixture on griddle. Fry until done as desired. Flipping after 5-10 min
Dipping options
- dijon mustard and honey
- ranch and chili garlic
