Quinoa Cakes

As we have modified our diets over the years we removed all the “white foods”.

Rice, potatoes, pasta, bread…

But there was a grain that was sorta white, and had more protein and there were so many things that you could use it for. So, we added that into our rotation, in moderation.

I got this recipe from my MIL and it’s a great substitute for rice – something to “sop” up the sauce!

It’s pretty versatile, you can add different veggies as binders, or cook the veggies with the quinoa. Many options!

Quinoa Cakes

Ingredients
  1. 2 cups cooked quinoa
  2. 2 eggs or 2 egg whites
  3. 1 cup shredded carrots
  4. 1/2 cup parmesan cheese
  5. 2 tbl flour
  6. 1/2 tsp season salt
  7. 1/4 tsp salt
Add ingredients to shopping list

Instructions
  1. 1. Heat a skillet to medium high heat
  2. 2. Mix everything together
  3. 3. Using a 1/4 cup measure, place mixture on griddle. Fry until done as desired. Flipping after 5-10 min
Dipping options
  1. dijon mustard and honey
  2. ranch and chili garlic
