A friend of mine posted this fantastic recipe and it took me quite a while to get it into the rotation and darn if that wasn’t a big mistake to wait!
I didn’t have a grill available so I decided to go with the secondary way to cook it and it was great!
Jalapeno Popper Smothered Pork Chops

This is a fun and tasty meal! Pretty easy to make and enjoy!
Ingredients
For the pork chops (or chicken breasts):
- 2 pork chops
- 1/2 Tbsp olive oil
- 1 tsp garlic powder
- 1 tsp kosher salt
- 1/4 tsp ground black pepper
- 2 Tbsp salsa verde
For the cream cheese mixture:
- 2 ounces cream cheese
- 2-3 tbl salsa verde
- 1/4 cup shredded cheddar cheese
- 1 Tbsp chopped jalapenos
For the topping:
- 1/2 cup shredded cheddar cheese
- 1/3 cup chopped cooked bacon
- 1/3 cup raw jalapeno slices
Instructions
- Preheat the oven to 350
For the pork chops:
- Combine the olive oil, garlic powder, salt, pepper, and 2 T salsa verde in a medium bowl.
- Add the pork chops and rub the mixture into them.
- Preheat the pan while the pork chops marinate for a few minutes.
- Once the pan is hot, cook the pork chops for about 5-6 minutes per side or until just cooked through.
- Place on a cookie sheet covered with a silpat
For the cream cheese mixture:
- Heat the cream cheese in the microwave for 30 seconds or until really soft.
- Stir in the salsa verde, 1/4 cup shredded cheddar and chopped jalapenos.
- Divide the mixture between the 2 pork chops and pile it on top.
- Cook for 5-10 minutes until the mixture is melted

What a great recipe! I can be scaled to accomodate the people you have. The original was 6, i make it for just the hubby and i!
It is keto and wheat free, so can go a long way for those with different diets underway!
