We had a friend over that was not able to have any spice, so I decided to shift this recipe a little to make it perfect for him. Original recipe called for a pie pan version, I like the small pyrex better to allow the large quality of meat to cover it well.
Black Bean Tamale Pie

Ingredients
- 1/2 pound ground turkey
- 1-2 jalapeños (optional)
- 1 clove are garlic shredded
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup salsa (green or picante0
- 1 package (8-1/2 ounces) cornbread/muffin mix
- 1/4 cup almond milk
- 1 large egg (or 2 egg whites)
- 2 tsp southwest seasoning
- 1.25 cups shredded cheddar cheese, divided
Instructions
- In a large skillet, cook the turkey, jalapeños if using and garlic over medium heat until meat is no longer pink; drain.
- Stir in beans and salsa; set aside.
- In a large bowl, combine the muffin mix, seasoning, jalapeno (if using), milk, egg and 1/2 cup cheese.
- Pour cornmeal mix into a small greased pyrex.
- Bake at 375° for 5-6 minutes.(or 10)
- Spoon meat mixture over crust.
- Bake for 15-18 minutes or until crust is golden brown.
- Sprinkle with remaining cheese.
- Bake 1-2 minutes longer or until cheese is melted.
- Serve with sour cream and olives if desired.
Verdict:
This is a very versatile recipe. Change how long you cook the corn bread, choose your shape, change out your beans. Add green chilis to the cornbread or the meat.
