We had a friend over that was not able to have any spice, so I decided to shift this recipe a little to make it perfect for him.
Original recipe called for a pie pan version, I like the small pyrex better to allow the large quality of meat to cover it well.
Black Bean Tamale Pie
1/4 of the pan
1/2 pound ground turkey
1-2 jalapeños (optional)
1 clove are garlic shredded
1 can (15 ounces) black beans, rinsed and drained
1 cup salsa (green or picante0
1 package (8-1/2 ounces) cornbread/muffin mix
1/4 cup almond milk
1 large egg (or 2 egg whites)
2 tsp southwest seasoning
1.25 cups shredded cheddar cheese, divided
In a large skillet, cook the turkey, jalapeños if using and garlic over medium heat until meat is no longer pink; drain.
Stir in beans and salsa; set aside.
In a large bowl, combine the muffin mix, seasoning, jalapeno (if using), milk, egg and 1/2 cup cheese.
Pour cornmeal mix into a small greased pyrex.
Bake at 375° for 5-6 minutes.(or 10)
Spoon meat mixture over crust.
Bake for 15-18 minutes or until crust is golden brown.
Sprinkle with remaining cheese.
Bake 1-2 minutes longer or until cheese is melted.
Serve with sour cream and olives if desired.
This is a very versatile recipe. Change how long you cook the corn bread, choose your shape, change out your beans. Add green chilis to the cornbread or the meat.
If you try it, let me know how you made it and what you thought.
