I’m always up to trying new ways of cooking chocolate chip cookies. I even have a book 101 chocolate chip cookies (it was a gift). Hubby did mention when we tried this one before that he really like it. I generally don’t like my own cookies – i’d rather eat a bowl of cookie batter, but i had a hard time stay away from these once they were cooling on the racks on the counter.
The original recipe called for lemon and walnuts. I didn’t have any lemon and I have a thing about nuts in cookies… Still delicious and crispy
Have you seen the cool internet trick of putting a stick of butter inside a pint glass on the counter? Makes it soften quickly! I did it with frozen butter and darn if that didn’t work great!
Double Tree Chocolate Chip Cookies
Ingredients
- ½ pound butter, softened (2 sticks)
- ¾ cup + 1 tablespoon granulated sugar
- ¾ cup packed light brown sugar
- 2 large eggs
- 1 ¼ teaspoons vanilla extract
- 2 ¼ cups flour
- 1/2 cup rolled oats
- 1 teaspoon baking soda
- 1 teaspoon salt
- Pinch cinnamon
- 2 2/3 cups Nestle Tollhouse semi-sweet chocolate chips
Instructions
- Cream butter, sugar and brown sugar in the bowl of a stand mixer on medium speed for about 2 minutes.
- Add eggs, vanilla blending with mixer on low speed for 30 seconds, then medium speed for about 2 minutes, or until light and fluffy, scraping down bowl.
- With mixer on low speed, add flour, oats, baking soda, salt and cinnamon, blending for about 45 seconds. Don’t overmix.
- Remove bowl from mixer and stir in chocolate chips
- Portion dough with a scoop (about 1 tablespoons) onto a baking sheet lined with silpat about 2 inches apart.
- Preheat oven to 300°F. Bake for 15 minutes, or until edges are golden brown and center is still soft.
- Remove from oven and cool on baking sheet for about 1 minute.
Verdict:
As I mentioned above, i had trouble staying away from these cookies! They are crispy and flat and oooooh so good.

Pro tip: I have a double oven, so was able to have the cookies going, 2 at a time. I spin my trays half way thru (7min / 8min). Then let them cool for a minute on the tray before moving them to the cooling racks.
