I was looking up how long one needed to sous vide ribs, not thinking about anything but the normal, bbq…
Then i see this recipe… angels sing, my tastebuds salivate.
Let’s try it!
I took some other recipes, aka how many hours to sous vide vs this recipe as the note was to be able to do it quick. I wanted fall off the bone, and easy to cut.
I changed the time to be 16-24 hour vs the 4 in the link above.
I liked the sauce and being able to sous vide with it in the bag. Unfortunately for me the seal ruptured at the very end, so water did get into the ribs. It all worked out.
I decided to pull options of how to finish the ribs via the broil option to get some crisp.
This will be the rib option used the most! More than crockpot with dr pepper, more than sous vide with bbq sauce.
Sous Vide Char Siu Style Chinese Baby Back Ribs
Ingredients
Marinade Ingredients – 1/2 of the rull recipe
- 8 tsp hoisin
- 8 tsp soy
- 8 tsp sugar
- 1.5 tbl honey
- 1/4 tsp white pepper
- 3/4 tsp 5 spice
- 1/2 tbl miso
- 1.5 tbl sherry
- 1 tsp sesame oil
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 garlic clove crushed
- 1/2 inch ginger
Ribs
- 2 sets of ribs (3-4 ribs per set)
Instructions
- Set the Anova to 167 degrees Fahrenheit in the water bath
- In a large bowl, combine all marinade ingredients.
- Spoon out and reserve about 1/3 cup of the marinade in a separate, small, covered container.
- Store this in the refrigerator until ready to use.
- Add racks of ribs to the large bowl of remaining marinade.
- Mix to coat the ribs well.
- Vacuum seal each rib rack in its own bag. (optional)
- Once the pot of water has reached its required temperature, add the bags of ribs.
- Set the Anova for a cooking time of 24 hours.
- When the ribs are finished cooking, use tongs to remove them from their bags.
- To broil the ribs, heat the broiler to high.
- Use a pastry brush to coat the ribs with sauce and place on an aluminum foil-lined broiler-safe baking sheet.
- Place the ribs under the broiler and cook until the sauce is caramelized, 1 to 2 minutes. (up to 10 if you need to keep it lower from the broiler to keep it from catching fire)
- Watch the ribs carefully so that the sauce doesn’t burn. Let the ribs rest for 5 minutes.

I already hinted – yes, 100 time yes!
