Saw this recipe in the book that came with the instant pot and decided to give it a try. It definitely needed some update, but it came out well!
Refried Beans – Instant pot

1/2 cup
Ingredients
- 1 tbl evoo
- 1/2 onion, diced
- 2-3 jalapenos/serranos
- 2 tsp chipotle seasoning
- 3 tsp cumin
- 2 cups dry pinto beans’
- 2 cups water
- 1/4-1/2 cup light sour cream
Instructions
- Soak beans overnight
- Drain and rinse
- Turn instant pot on saute
- Add oil
- Saute onions and peppers till soft
- Add seasoning
- Add beans and water
- Close and lock lid
- Pressure cook for 10 min
- Natural release
- Immersion blend
- Add hot sauce
- once cooled, add sour cream
- Immersion blend again until creamy
Verdict: definitely took some tweaking to make it perfect, but then it was so good, i forgot to get a picture! Everyone says making your own refried beans it so much better than canned, gotta say they were correct and it was so easy and hands off in the instant pot!
