It all started with a giant zucchini

I was away on a vacation and someone left a giant zucchini on my stoop.

I had an unexpected day off, so i decided to tackle this monstrosity!

Here is what i made with this giant vegetable:

First – i cut the zucchini in half, peeled it and chopped it small. (fyi the knife in the picture above is a chef knife… and those are sunglasses for scale)

Cobbler is my goto when i have a huge zucchini!

Next up was peeling and shredding the rest of the zucchini and measuring it out!

Frosted Brownies is my fun favorite (2 1/2 cups shredded)

Lemon Zucchini Bread is such a bright citrus hit (2 cups shredded)

Zucchini Feta Fritters are my single lady goto dinner

This time i air fried them, half the recipe and a whole egg. They puffed up!

Verdict:

I have been cruising the neighborhood sharing the baked bounty. This thing made a ton!
