A while back I made these brownies for a girl’s night and decided what they needed was chocolate chips and a sprinkle of salt. And then, I was having a couple over for dinner and thought – edges, everyone loves edges of brownies. Don’t I have an “edge” brownie pan? Alas I never got one, but what I do have is mini loaf pan.
I took the original recipe, added about 3/4 cup of chocolate chips, used these mini loaf pans

Ingredients
- 1⅓ cups all-purpose flour
- 2 cups sugar
- ¾ cup baking cocoa
- 1 tsp. baking powder
- ½ tsp. salt
- ⅔ cup vegetable oil
- 4 eggs, slightly beaten
- 2 tsp. vanilla
- 3/4 cup chocolate chips
- sea salt flakes for topping
Instructions
- Preheat oven to 350 F.
- Lightly spray a mini loaf pan with cooking spray.
- In a mixing bowl, combine the flour, sugar, cocoa, baking powder, and salt.
- In another bowl, combine the oil, eggs and vanilla.
- Add the wet ingredients to the dry ingredients.
- Mix just until combined – Do NOT overmix.
- Stir in the chocolate chips
- Spread evenly into into the prepared baking loaf sections.
- Bake for 15-25 minutes or until a toothpick inserted near the center tests clean.
Verdict:
This was a fantastic way to cook brownies, and fun way to serve up dessert! Definitely an excessive amount of brownie per person, but let’s enjoy life to the fullest!
